Skybird is ready to fly with two new fast-casual restaurants opening in early 2025

A fresh Asian grill concept from visionary restaurateur Rio Infantino, is set to launch with two exciting locations opening in early 2025. Combining bold Asian-inspired flavors with health-conscious options, Skybird offers a unique dining experience designed for today’s fast- casual market. 
The Skybird Experience 
The menu features customizable grain salad bowls, where guests can select fresh vegetables, grilled proteins, and one of six signature sauces to create their perfect meal. Skybird also offers Vietnamese-style banh mi sandwiches, crafted with the same fresh ingredients and customizable with sauce and protein options. To complement the food, the drink menu includes craft sodas, milk teas, and Vietnamese cold- brew coffee, along with house-baked matcha and ginger cookies for a sweet finish. 
Locations & Atmosphere 
The first location will open at 248 Jean-Talon West in Montreal’s Mile End, followed by a second on February 15 at 14845 Pierrefonds Blvd. Each restaurant will feature a warm, modern design that creates a welcoming and vibrant dining environment. 
About the Founders 
Skybird is the brainchild of Rio Infantino and his son Andrew, a father- and-son team with deep experience in launching successful restaurant brands. Rio, a seasoned entrepreneur, has built a career that spans McDonald’s, 16 Subway franchises, and the creation of the plant-based Copper Branch chain, which expanded across North America and Europe. With Skybird, the duo is poised to capture the growing demand for fresh, fast, and nourishing meals. 
A Growing Market 
Asian-inspired dishes have seen a 20% growth in North America over the past five years, surpassing overall restaurant industry trends. Skybird’s emphasis on fresh, flavorful, and health-conscious meals positions it perfectly to meet this demand. 
Expansion Plans 
Skybird plans to open additional locations in 2025, targeting high-traffic streets, open-air plazas, and regional malls. Each location will be approximately 1,500 square feet, designed to support a fast-casual dining experience.
